This vibrant orecchiette with fresh mozzarella and grape tomatoes is a celebration of simple, Mediterranean flavours. The 'little ears' of pasta are the perfect vessel for catching bits of melted cheese and sweet, sun-ripened tomatoes, creating a dish that is light yet deeply satisfying. Using white balsamic vinegar provides a subtle, fruity acidity that balances the richness of the extra-virgin olive oil without discolouring the fresh ingredients.
Ideal for a quick vegetarian dinner or a sophisticated weekend lunch, this recipe is incredibly versatile. The addition of aromatic garlic chives and fresh oregano adds a fragrant, savoury depth that elevates the dish beyond a standard pasta salad. Serve it warm while the mozzarella is beautifully gooey, or enjoy it at room temperature for a refreshing summer meal that the whole family will love.
