Maple-Glazed Tuna with Pear-Potato Salad

This sophisticated high-protein dish offers a beautiful balance of sweet and savoury flavours, pairing meaty tuna fillets with a zesty maple and lime glaze. By searing the tuna quickly over a high heat in a frying pan, you achieve a delicate crust while keeping the centre tender and moist. The addition of real maple syrup provides a complex sweetness that cuts through the citrus, creating a restaurant-quality finish that works perfectly for a quick evening meal.

Ideal for a nutritious mid-week dinner or a light weekend lunch, this recipe is as practical as it is impressive. The accompanying pear and potato salad adds a refreshing crispness and essential carbohydrates to fuel your day. Ensure you use high-quality, sustainably sourced tuna and authentic maple syrup rather than imitation varieties for the best flavour and a truly wholesome dining experience.

Ingredients for Maple-Glazed Tuna with Pear-Potato Salad

  • 1 tablespoon Dijon mustard

  • 2 tablespoons maple syrup (see Tip)

  • Juice of 1 lime

  • 60ml olive oil

  • Four 170g tuna fillets

  • Salt and freshly ground black pepper

  • 4 coriander sprigs

  • Pear-Potato Salad

  • Avoid imitation maple-flavoured syrups, which are typically made without any real maple syrup.

  1. Whisk together the mustard, maple syrup, lime juice, and 1 tablespoon of the olive oil. Set aside.

  2. Season the tuna on both sides with salt and pepper. Heat the remaining 45ml olive oil in a large cast-iron skillet over high heat. Add the tuna and cook for 30 seconds on each side.

  3. Remove from the pan and brush both sides of the tuna with the maple-mustard glaze. Transfer to a serving platter and garnish with the coriander. Serve with the pear-potato salad.
