This simple fried chayote squash recipe is a wonderful way to introduce this versatile vegetable to your weekly menu. Often overlooked, chayote has a mild, clean flavour that absorbs seasonings beautifully, while its texture remains slightly firm yet succulent. In this dish, the squash is gently sautéed with sweet, golden onions and fragrant oregano to create a light and aromatic side that complements a variety of main courses.
As a nutritious vegetarian dish, this recipe is naturally low in calories and provides a refreshing alternative to standard root vegetables or greens. It is particularly well-suited for a quick midweek supper or a healthy Sunday lunch. Serve it alongside grilled halloumi or roast chicken to add a vibrant, savoury element to your plate that the whole family will enjoy.

Ingredients for Fried Chayote Squash
2 tablespoons butter
1 tablespoon olive oil
2 medium onions, sliced
2 chayotes, pitted and thinly sliced
2 teaspoons dried or 2 tablespoons chopped fresh oregano
1/2 teaspoons salt
1/4 teaspoons freshly ground black pepper
How to make Fried Chayote Squash
Back to contentsHeat the butter and oil in a large skillet over medium heat, until the butter is melted. Add the onions and sauté until they are golden, but not browned, about 8 to 10 minutes. Add the chayote and oregano and sauté an additional 2 or 3 minutes, until the squash starts to soften. Lower the heat, cover, and let cook until the chayote is tender, an additional 10 minutes.
Remove from the heat. Add the salt and pepper and toss before serving.
