Sugar Snap Salad

This vibrant sugar snap pea salad is a celebration of seasonal textures and bright, zesty flavours. Combining the crunch of blanched peas with peppery radishes and the salty tang of ricotta salata, it is finished with a citrusy sumac dressing and fresh mint. It is a light, uplifting dish that brings a sophisticated touch to any table while remaining remarkably simple to prepare.

As a versatile vegetarian side, this salad pairs beautifully with grilled halloumi or roasted new potatoes. It is also an excellent choice for meal prep, as individual elements can be prepared a day in advance and tossed together just before serving. Nutritious and refreshing, it offers a healthy way to enjoy fresh garden produce during the warmer months.
