Spicy Chicken Lettuce Wraps

This vibrant recipe for spicy chicken lettuce wraps offers a wonderful balance of heat, salt, and crunch. Combining minced chicken with aromatic garlic, spring onions, and a punchy sambal oelek sauce, it creates a satisfying filling that feels indulgent yet light. The use of crisp Bibb lettuce leaves as a natural alternative to flour wraps makes this a refreshing choice for a quick midweek dinner or a sophisticated starter when entertaining guests.

As a diabetes-friendly option, these wraps are naturally low in carbohydrates while remaining high in protein. The addition of fresh herbs and a squeeze of zesty lime provides a bright finish that cuts through the savoury notes of the chicken. It is an ideal dish for those seeking a nutritious, homemade meal that does not compromise on bold, Southeast Asian-inspired flavours.

Ingredients for Spicy Chicken Lettuce Wraps

  • 2 tablespoons soy sauce

  • 1 tablespoon dark brown sugar

  • 1 teaspoon fish sauce

  • 1 tablespoon sambal oelek or Sriracha, plus more for serving

  • 2 tablespoons vegetable oil

  • 3 spring onions, white and pale green parts only, thinly sliced

  • 2 garlic cloves, finely chopped

  • 450g chicken mince

  • Kosher salt

  • Bibb lettuce leaves, lime wedges, and tender herbs (for serving)

Mix soy sauce, sambal oelek, brown sugar, and fish sauce in a small bowl; set aside.

Heat oil in a skillet over medium. Add spring onions and garlic and cook, stirring occasionally, until softened (a little colour is okay), about 3 minutes. Add chicken and lightly season with salt. Cook, breaking up with a wooden spoon and tossing occasionally, until chicken is cooked through, 5–7 minutes. Add reserved soy sauce mixture and cook, tossing occasionally, until liquid is almost completely reduced, about 2 minutes.

Serve chicken mixture with lettuce, herbs, lime wedges, and more sambal oelek for making lettuce wraps.
