Ingredients for Coconut-fig energy balls
300 g dried unsweetened Turkish figs (you can easily switch out the figs for dates for a variation)
120 g unsweetened shredded coconut, divided
80 ml coconut oil, melted
1 g ground cinnamon
sea salt or pink Himalayan sea salt to taste
How to make Coconut-fig energy balls
Line a large baking tray with parchment paper and set aside.
In a food processor or blender, combine the figs, 150 g of coconut, coconut oil, cinnamon, and salt. Blend until a smooth paste forms, resembling the consistency of brown sugar.
Form the mixture into 2.5 cm balls, using about 15 g of the batter for each. Roll the balls in the remaining shredded coconut until fully coated.
Refrigerate the coconut balls for 30 minutes before serving.
