This indulgent banana stuffed French toast offers a delightful twist on a classic breakfast favourite. By using thick cinnamon-raisin bread and a golden cornflake and almond crust, you create a beautiful contrast between the soft, warm fruit filling and the extra-crunchy exterior. It is a satisfying vegetarian dish that feels like a treat but uses egg whites and fresh fruit to keep the flavours bright and balanced.
Perfect for a slow weekend brunch or a special family breakfast, this recipe is effortless to prepare and takes just minutes in the frying pan. Serve it alongside a handful of fresh summer berries and perhaps a drizzle of maple syrup for a comforting, homemade meal that is packed with texture and natural sweetness.
